Not Your Average Guacamole!

Not your average guacamole!Not too terribly long ago, I bought a bushel of avocadoes. They were on sale for $20, and I didn’t have a clue how many avocadoes were in a bushel. Turns out, it’s 84. I accidentally bought 84 avocadoes for one Andrew Jackson…and not a one of them went to waste. I told you I can eat an embarrassing amount of chips a dips. I parsed them out amongst my friends and family but, since none of them are as insane as me, I was still left with about 40 avocadoes. We ate avocado everything: toast, sandwiches, and, of course, guacamole. I came across a Bad Manners guacamole recipe a few years ago that included an unexpected ingredient, and it’s perfect. To me, it’s the only way to eat gauc. This is my version, it’s very Choose Your Own Adventure.

Here’s what you’ll need:

• 43 avocadoes. I’m kidding. Use a normal amount like 2 or 3.
• 1 fresh pineapple
• 1 jalapeno
• 1 purple onion
• Cilantro or parsley, depending on your taste
• Salt and pepper to taste

Here what you do:

1. Cut the bottom and the crown off your pineapple. Halve and carefully trim the rind and the core. Roughly chop into whatever size pineapple chunks you want. I like to do a cross between cubed and crushed. Do whatever you’d like with the other half of the pineapple. I’d probably eat it because I can also eat an embarrassing amount of fresh pineapple.

2. Roughly chop your jalapeno, purple onion, and herbs. Add a little or a lot to your pineapple mix.

3. Cut open your avocadoes, remove the pit, and scoop the fruit into a bowl. Mash it up with a fork or potato masher. You are welcome to use a blender, but I like a less uniform, chunkier guacamole.

4. Add all your other ingredients, salt and pepper to taste, and serve.

Now, there are a million tips and tricks to keep your guacamole from turning brown: add lime juice, put the pits in the bowl, eat it all before it has a chance to turn. All of those are fine, but the really cool thing about this recipe is the acid in the pineapple keeps the avocado from turning! The color stays nice and bright, making it a lovely dip. And you get that nice little pineapple surprise.
